On my way home I saw a man selling something that resembled an apricot but the skin looked shiny and slightly off colour. I was curious to try it, and bought 3 for only 25 cents. Biting into it I was expecting it to be juicy; it was unlike anything I have I tasted it before. The starchy vegetable texture that resembles yam, and potato was extremely satisfying. It differed from anything that I had before, but being a vegan you often do not get picky with food that you can find, especially in Panama City. I talked with the locals to understand why it is a such very popular street snack. I was pleasantly surprised that the “Pixbae” is nutrient dense fruit.

Contains: Vitamin A, Thiamin, Riboflavin (excellent for the blood), Niacin (very good supplement to keep good eyesight), Ascorbic acid, calcium and other nutrients.

It can also be used to make compotes and jellies or to make flour and edible oil.

Usually its prepared in salted boiled water.
